Muno-IgY Anti-Gliadin Specific for the Management of Gluten Intolerance

Whitepaper  |  Scientific Review

Gluten is a heterogeneous protein which has two fractions: glutenin and gliadin. Together they form a structure that is highly desirable in food products; gluten allows these products to hold their shape, become more elastic and firmer. Research shows that gliadin is directly responsible for the onset of chronic inflammatory disorders and will be the focus for this paper. For affected individuals, gliadin sensitivity can trigger complex reactions as they create major inflammatory responses. Typically, after the gliadin is consumed and broken down in the gut, an innate immune response is initiated, resulting in general inflammation in the gastrointestinal tract. This is followed by an adaptive immune response not only towards the gluten proteins but also towards the production of T cell released proinflammatory cytokines that directly lead to damage of the intestinal epithelium. Of course, once this vicious cycle of inflammation is allowed to continue, autoimmune disorders arise.

This whitepaper offers insights into Muno-IgY and confirming it’s binding potential to the gliadin fraction thereby suggesting its potential as an oral therapeutic for the management of increased intestinal permeability.
